If you select the player that isn’t showing up with his X factor (cam heyward in my case) go to edit player and go to where you can change his trait, change it from superstar X factor to just superstar and save, after you save the change to back and it, should work. Basically just try to trigger MUT ads from playing other parts of Madden 23 like Face the Franchise until you get one that lets you into MUT like normal.
